I am the very proud owner of 2 of the standard wood fired ovens – the original one is used as my mobile oven on a trailer and the second one at my farm where it is used for serving pizzas along with the home produced cider and apple juice.

I bought the new pro oven for one of the Christmas light events held at the stately home locally to me where we have a wood fired pizza concession. I was particularly interested in how the pro wood fired oven differed slightly to the standard. In a nutshell the cooking times got shorter so we were able to cook pizzas quicker and our wait times reduced dramatically. I bought the second biggest oven so the interior could fit comfortably 5 12” pizzas. The reduction in wait time I feel is one of the main reasons we increased our business by 40% at the Christmas lights experience compared to the previous year. Even when working in sub zero temperatures over that December period we were still producing fabulous pizzas.

We moved into a Victorian Walled Garden outside Hawkhurst this summer to set up a new restaurant. We needed to have an oven that was versatile enough to cook vegetables, meat and fish but also hot enough to cook off a flat breads. We spoke with Tim from Pro wood Fired ovens and he guided us through a decision making process so we landed with the correct size oven for our 60 cover restaurant. It’s been a dream. The oven offers our chefs space to cook with control and versatility. The smoke roles beautifully over the food and imparts the most delicious flavour. Looks good to and we can move it around to suit various British weather conditions. Five stars from us at Water Lane.


We bought the oven just before lockdown with our original idea to host jazz and pizza evenings.  Ironically due to Covid-19, as we can’t have live music gatherings, we are hosting pop-up woodsmoke kitchens cooking Paella, slow cooked brisket, pork belly and so much more.  At the moment we have beef and chicken bone broths, slow dry roasting shitake mushrooms and onions cooking for tonight’s smoke  & noodles AKA Ramen!
